Actually there are not very many common parts between the two. The 1100 was a complete re-design on the same concept. The similarities are there because the design team was essentially the same. I've heard of a head swap between the two, but that involved relieving the pistons to clear the valves and was quite a bit of thoughtful work.
There are probably a large number of small parts that fit such as fasteners, timing belts, oil filter, and such but most of the major components are different.
If you were wondering you could download the parts manual for the 1000, and for the 1100 from this site and cross reference to see if any parts match. I looked up six different engine parts that I thought might be the same but they all have different numbers. If Honda carries a part through to a new model, the number stays the same.

I found out a lot of this the hard way. I had an 83 Interstate, and all I kept was the front crash bars, foot pegs, kickstand, exhaust, (works with short shocks) radiator, and that was about it. Sold the ignition switch out of it and installed it in a 77 CB750.

I'm using a complete 1100 exhaust system on my 1000, but in order for the crossover to clear the rear wheel, it has to have 2" short shocks. The kickstand is the same, but the piece of frame it bolts to is different.
Pretty sure Interstate racks would bolt up.
Rear air shocks are different and won't swap.
