Would there be any potential problems with replacing the standard lead/acid battery in my '78 GL1000 with one of the no- maintenance permanently sealed gel-pak batteries?

There shouldn't be any problem with this. My only thought would be to make sure whatever you buy has adequate cranking amps.

Absolutely no problem. Just stay with the same size and rating as it's conventional brother and you'll be just fine.
