2 or 3things..
During your service
...Did you.......
Remove the seal in the caliper and remove any white crusty buildup....This oxidation will put abnormal pressure on the piston..
Check that the Piston slides to the bottom of the caliper without sticking before you put the seal back in.
Check that the piston can be pushed to the bottom of the caliper with just thumb pressure after complete assembly.
Remove the master cylinder, clean it and the very tiny pressure bleeder port...the hole just in front of the main supply hole.
Suspect that the brake line has deteriorated inside and may be collapsing.
Also double check the caliper mounting hardware and alignment...When first fitted to the rotor,it must swing easily...after applying brake pressure, the caliper must release it's pressure through thee bleeder port and lighten it's grip on the rotor...it then should swing or move free again.

I just happen to find a strand of wire that worked...It's smaller than a sewing needle...some use a single strand of wire from a fine wire brush,etc,etc...
Flush the master clean...including the reserve tank...use new fluid through the entire system.
Beware that brake cleaner can damage plastics and rubber....Don't clean it with brake cleaner...
