Overhaul Overheating

So i have a 1980 GL 1100 that I am getting to run for someone after about 20 years of non use. I replaced the suspension, rebuit the brakes and carbs, lined the gas tank, and put new rubbers on the machine and it runs now. Allthough its rough on the warm up, it works great after it's been warmed up. However, the entire cooling system on the it does not seem to be working, and it doesnt seem to stop warming up. After running for a while, the temperature gage continues to climb untill it is close to the red zone; then I kill it. I flushed out the old coolant and put new coolant into the resovuar, but i did not replace the coolant for the radiator. This could be the sorce of my problems but the elecic fan does not work either, leading me to belive that either the thermoustat or the temperature sending unit is broken. It would be a shame to fill the whole system with new fluids just to flush it out to pull the thermostat. Any help would be apreciated, thanks.
