I haven't removed them from my Interstate yet, but if you mean the copper/brass crush gaskets I've removed them form other bikes by carefully prying with a screw drive or a pick of some sort. Never had any problems - carefully is the key word.

I use the same technique as colemadad, the larger the end of the screwdriver (meaning wider) the less damage you might do to the exhaust tract, but just carefully pry them out, then remove any loose carbon. Put a small amount of grease on the new one and put it back in, the grease holds it in place until you get the exhaust on..
