Head Gasket

I recently bought a gasket set for my GL1100AD and received a set marked up for
the GL1000K. Looking through the sets they look pretty much identical but I am
worried about the head gaskets. Those for the GL1000 appear to intrude into the
combustion chamber when compared to the ones I removed. i.e. the bores look
smaller.

My question is - would it hurt to use the 1000cc head gaskets for the 1100
engine?

I personally would not.The bore is smaller on the 1000 and so is the crush ring that seals the sleeve to the head.I would be concerned that the seal area would be insufficient for the larger bore.

Agreed. I would return the gaskets and insist you be given the correct ones.
