Step-by-step instructions would be a bit much to post here. Normal stator removal procedure would be to remove the engine from the frame, take the engine case off the back of the engine, and remove the defective stator. The carbs can be detached from the engine as a unit prior to engine removal from the frame. A manual would be highly useful for this procedure. A first-timer could easily spend a weekend doing this. Having said all of this, a lot of help and advise is available on this site.

You might consider doing a poor boy conversion installing an external alternator. There are kits you can purchase online for this. It is a big upgrade over the stock charging system. Do a google search and you will find many links on this subject. You don't have to remove the motor to do it.

Other guys recommend the "Poorboy" system. Should you choose that method, make certain to use a setup that parasites off of the Crankshaft, not the camshaft.

I had a friend install the "Poorboy" conversion and it has worked out great. I would recommend it over the alternative.

Huge job since the engine needs to be removed. Some great Youtube videos are available though! I did the 'Poorboy' myself.
