My guess is that it’s running too rich and flooding. I would start with ensuring the floats and pilot screws are to spec.

From what I understand, tolerances and quality on aftermarket carb rebuild kits are not to the same standard as Honda OEM. I believe the vacuum cap is the same on the 78/79.

From the pic of the spark plugs, it looks like one cylinder is running rich. How’s compression and did you double-check float height and the rubber tip on the float needle?

If you have good spark, I would lean towards a dirty idle circuit. You might give this a try:

I’ve also seen suggested to use a cheater over the tang on the center stand to create more leverage.

They sure will. It’s often advised to completely dissemble, clean really thoroughly, and replace all the rubber bits with Randakk’s kit. There are really good resources here, NGW Forum, and Randakks.

I would check underneath the bike for more rust, especially around the center stand, and make the judgement if the subframe needs to be replaced. The bike won’t be safe to ride in my opinion, if the frame’s structural integrity is shot. https://www.google.com/search?q=1978+gl1000+subframe&rlz=1C...

I would check the water pump. Oil and coolant will mix when it or its seals fail. If the impeller has side-to-side play or is made of Bakelite, it needs replaced along with all the front end gaskets. After that, I would then perform a leak-down test to see if you have a bad head gasket.

What’s the compression on the cylinders? I don’t think you would have smoke on the right side of the engine due to the bike sitting on the side stand. Those that have been around these engines for a long time often advise to replace the belts before any other work is performed. Did you replace the belts? You could pull the covers and make sure the timing is correct. It’s my understanding that the engine will run one tooth off, but poorly.

I can't tell from the picture...is it dripping off of carb#3? The potential leak source there is the accelerator pump. If the diaphragm goes bad gas will travel up the rod and squirt out the top. You can usually see it if you look at the pump rod and twist the grip sharply. I might be wrong, but I ...
