Congratulations on the new ride.
Those look like common Kuryakyn brand pegs and mounts. You could probably clamp to the vertical bar and rotate the arms around. You can check their site and see if there are different mounting blocks or arms that might work better for you.

At least you can do both latches for symmetry.

I find the GL1800 to be about as smooth a drivetrain as I can remember on anything. Try unbolting the pillion floorboard. Believe the chrome piece is bolted to it.
