Welcome. Great looking bike. The 1500 is the Cadillac of the GW line. Wingadmin has a video regarding removing the plastics. There is a specific order to it. Enjoy your new ride.

A rad fan option is one from an 1800. I installed one, works well, a bit more low profile than the 1200 rad fan.

Lapping the valves is to remove any carbon/crud build up on the valve seat.

Exhaust port gaskets - make sure all the old ones are removed. First time I did mine, there were three gaskets in each port.

Read your thread. For the head removal and head gasket replacement, you need to remove the timing belt(s), both depending on the side affected. Bob Henshaw also made new cush dampers for the 1200 units, probably fit older GWs as well. Picked these up from him, and have several sets of these. Here's a couple of pics of what I have:
