Edsets without speakers?

I would like to use full face helmets and use a surface mic and ear buds, no speakers.

I know I need the Edset surface mics, the 3.5 mm adapters and the 5 pin cables, but I don't understand how the 5 pin cable connects to the surface mic at the helmet?

Are his mics even better than others?
