My project is missing the 'old' steering balls etc.

So how about fitting a tapered bearings/seal kit ?

Most of the ones on UK fleabay state "Honda GL1000 Gold Wing 1977 - 1979"
Will these fit a '76 or did Honda increase sizes ?

Tapered is suppose to work on a 75 and 76 per other users. I have not done it myself, but others have not reported an issue. Tapered work lots better, hence the switch in 1977.

I installed the tapered bearings on my 1976 and it was a good fit. I'm sorry, I don't remember which manufacture I used.

I have installed tapered bearings on at least 6 GL1000s and the 1975-1979 year models use the same size. I think it is one of the best changes you can make to a GL1000.

Very helpful clarification. Thanks.

Interesting also to see your motorcycle collection.
I can lay claim to :-
BMW R65 ('82ish)
Honda CB900C
Honda CB750SC
Honda CBX250RS
Yamaha TR1
Moto Guzzi Monza V50 ... plus other odds.
