I have a GL1000 registered as a 1976 model, the engine serial # is GL1E-2031206, however the carbs are 771A.
I'm in Canada (Quebec), & I'm trying to rationalise the mis-fit between the two numbers.
The bike was running just fine until it developed a fuel leak at the #2 carb near the end of last season.
I removed the carbs to do a Randakk rebuild kit when I noticed the carbs didn't fit with the engine's serial#, or do they?

That carb set is from a 1979. 1976 carbs are 758A.

Ok, so yes they are the wrong carbs for the year. Yes, they are not optimal for the cams and ignition timing of the 76 (but, unless you remove the cams and check the part numbers you equally don't know if the PO changed them too!)
Look, surely the answer to the whole thing is; In your own words, 'it was running fine' so as long as you are happy with the way it runs, get them rebuilt, put them back and go ride the thing!
Unless you are doing a 10 point concours restoration, no-one other than you is going to know.

I also subscribe to the point of view: "Don't fix it if it ain't broke!"
FYI the secondary fuel jets are #125 instead of #120. The others & the needles are correct
for the carbs.
They work in practice, but not in theory.
