Replacing my old cables.

I have a 1978 GL1000 that I've been turning into a cafe racer. In doing so I have put on lower handle bars, new grips, and new controls. This being my first project bike I've run into a few problems. First being the electrical. I have decided to re-do the whole thing. The previous owner had a cd/radio player in his fairing and he did a not so good job at wiring it. Leaving me with a big mess of wire. So I've gone clean and started over. The second and main issue are the cables. Specifically the throttle and clutch. The throttle seems simple to me. Remove from the carbs, measure for a new shorter cable, order and install. Getting to the cable is daunting but does not seem impossible. The clutch cable on the other hand. On my 03 Triumph Bonneville it is super simple to remove the cable. Unscrew the lever side on the handlebars and undo the two nuts at the other end of the cable. So I thought it would be similar on the Goldwing. But after inspecting the end of the cable near the transmission I have gotten stuck. I can loosen the slack, but not remove it. I need at least 4-5 inches shorter of cables for my new bars. What is the best way to go about this? If you know of where to get new cables that would also be greatly appreciated!

I've replaced the clutch cable on a 75 gl1000. There is a cover plate at the back of the engine on the lower part. At the time I had the gas tank out so it was "easy". I believe it should be possible without removing the tank. Just follow the cable back and there are a couple screws to remove the cover plate.
