Im having a coolant leak from my LEFT SIDE exhaust header where it connects to the engine. Can someone tell me what gaskets could be blown? See pictures below.

That’s likely a bad head gasket.

Also check coolant tubes across the top of the engine, o-rings can leak and coolant may simply be dripping off the bottom of the head after leaking from the top.

Leaking head gasket usually leaks coolant to combustion chamber, not to external. This will be evidenced by steam in the exhaust on one side.

My bike does the same but only during off season storage. Denver Winger describes well. Think it’s an expansion contraction thing. My coolant level has never gone down. I just place paper towel under tubes as part of storage.
