Can I replace swing arm bearings without removing the swing arm altogether?

Yes. You can remove the pivot pins (best to do one at a time, so the swingarm doesn't drop out, and support it from below), replace the bearings (or just push grease into them), then torque the pins back up, with the swingarm in the bike.

You need a special tool to torque them properly, but you can make one cheaply out of a socket. See: /forum/viewtopic.php?t=4638
