I didn't realize that there was a speed sensor on a GL1500. Where is it located?
I thought that the speedometer cable was what provided an input tot he speedometer in order to have a speed indication. I know that every time I have had a speedometer needle that bounced on a GL1500 it was because of a faulty speedometer cable.

Front wheel left side, it’s above your rotor on the left side, it’s a little silver circle, you’ll know when you see it

You’d have to take entire wheel off to replace it it’s a lot of work especially to get bike back up off it’s side after you remove and reinstall the front wheel

I'd check the cable for binding, when mine started bouncing, that was the cause, either needs lube or replacement, and as they are pretty inexpensive, I'd replace it.

Ditto on dry or worn cable causing the problem.

When you say speed sensor, are you talking about the pickup assembly?

ok, I realized you also said a noise. Is it coming from the dash? If so, it could be the speedo itself, maybe a worn gear, or the cable isn't seated fully. There are no sensors for it, it's a pure mechanical system.

the speedo works on eddy currents, if it bouncing check your cable. Either lube or replace.
