Always happy to help out a fellow Newfoundlander, I'm from corner brook area myself.

That video is excellent, its the one I used when I did my fork seals.

as far as i can tell my 1991 gl 1500 goldwing do not have a place to top up the fork fluid
it has no air valve to take out .i have seen videos of people filling them their
is there a special way of doing this.

The fork caps can be removed to change the oil. BEWARE the spring under the caps has tension even when the bike is raised with the front wheel off the ground.
Have a look in the How To section for everything you need to know.

I replaced the fork seals on my new to me 95 last week. It isn't a hard job at all with the hardest part to me is getting everything back in place after the forks are back together. I went to a 15 weight oil on mine since I ride mainly country and back roads down here in the deep south. Also mine has schrader valves installed. The only real problem I had was I ordered All Balls seals, and when they came in and I started installing them they were the wrong seal. The bubble pack listed the GL1500, but the seals in the pack were way larger than the parts that go on the bike. Also you will need a seal installer which I have, but there are videos on how to make one out of PVC.

I know at least one person here took their existing caps, and drilled and tapped them to accept schraeder valves.

If you are replacing the fork seals because they are leaking, they simply may have dirt or other debris in them. Try the product Sealmate first. For a few buck it may fix the problem. It worked for me. https://www.amazon.com/Motion-08-0395-S ... 263&sr=8-1

I'm one of those folks that tapped my Interstate caps. No need for the schraeder valves, but just installed button head cap screws for the next time I do my fork maintenance. The dust cover fits and no issues.

Did you put o-rings on the screws, or do the threads on the screw seal well enough?

Thank you for pointing that out, WingAdmin. Yes, I did install O-rings. I don't know whether they are needed, as the screws did appear to seat well without them, but the peace of mind was worth the extra few cents.
