On/Off-Road Tire Recommendations

So I have a GL1000 that's no show bike, but it's in good shape and is mechanically sound. I love its originality, but I'm starting to get interested in doing some reversible modifications to make it a bit more adaptable to its new life in California. I was thinking narrower bars and shorter mirrors (for added comfort lane splitting), and possibly removing the front and rear fenders to accommodate larger, dual-sport tires that'll give me more traction on the casual dirt trail or some sand. I'm fairly new to the technical side of motorcycles/tires and I'm wanting to learn, so I wanted to ask if anyone had recommendations as to what I should be looking for in this type of tire with regards to this more road-focused bike? Or am I being a fool?
