They are tubeless, yes. The best brand is the brand that you decide is the best for you. I don't think there is any "best" brand, lots of people have opinions.
I'm putting a set of Avon Venoms on my 1100 this spring, because they are what I consider to be "best" - you may decide otherwise.

I've seen that web site before - it looks like a great idea (similar to Slime, just not as wet) - but if you are using Dynabeads to balance your tires, it won't work, as the beads wouldn't move around inside the tire - I am pretty sure they would just stick to the gel.
